Indian Lentils
3 tablespoons vegetable oil
1/2 teaspoon red crushed pepper
2 tablespoons chopped fresh ginger
2 cloves garlic, chopped
1 small onion, chopped
1/2 small red pepper, chopped
1 teaspoon garam masala
1/2 teaspoon turmeric
3 medium carrots, chopped
1 cup lentils (rinsed after soaking in water overnight)
5 cups water
1 teaspoon salt
1/4 teaspoon black pepper
naan bread or jasmine rice, for serving
Heat the oil in a large saucepan over medium heat. Add the red crushed pepper, ginger, and garlic and cook, stirring occasionally, until fragrant, about a minute.
Add the onion and red pepper and cook, stirring occasionally, until softened, 2 to 3 minutes. Stir in the garam masala and turmeric. Add the carrots, lentils, water, salt,
and black pepper. Bring to a boil, reduce heat, and simmer for 1 to 1 1/2 hours, stirring occasionally.
